Ingredients

  • 1 tbsp canola oil
  • ½ cup onion chopped
  • 3 cloves garlic finely chopped
  • ¾ cup tomatoes chopped or ½ cup tomato sauce
  • 1 lb ground pork
  • 2 tbsp soy sauce or to taste
  • ½ tsp ground black pepper
  • 1 tsp anato oil Optional
  • ¼ cup water
  • ½ cup carrot diced
  • ½ cup potato diced
  • ½ cup red bell pepper chopped
  • ½ cup green bell pepper chopped
  • ½ tsp seasoning granules 

Instructions

  • Heat the pan with oil and saute onion and garlic until fragrant. Add the chopped tomatoes and saute until they release their juice.
  • Add the ground pork, soy sauce and ground black pepper. Mix and bring to a simmer. Add the anato oil and water. Cover and simmer for 5 minutes.
  • Add the diced carrots and potatoes, then season with seasoning granules. Cook for about 3 minutes or until tender.
  • Add the chopped bell peppers and continue cooking for a minute or two. Serve with rice or bread.
