This quick and easy ground pork Menudo recipe is a Filipino dish made of pork, carrots, potatoes and bell peppers. Sauteed in onion, garlic and fresh tomatoes. It’s economical and quick to prepare, ready under 30 minutes. A ground pork recipe perfect for a weeknight dinner!

How to make ground Pork Menudo
Heat the pan with oil on medium-high heat. Saute onion and garlic until fragrant. Add the chopped tomatoes and saute until they release their juice.
Add the ground pork, soy sauce and ground black pepper. Mix and bring to a simmer and let the pork absorbs the soy sauce. Add the anato oil and water. Cover and simmer for 5 minutes.
While the pork is simmering, you can prepare the vegetables. Add the diced carrots and potatoes, then season with seasoning granules. Cook for about 3 minutes or until tender.

Add the chopped bell peppers and continue cooking for a minute or two. Serve with rice or bread.

Storing: This ground pork Menudo can be refrigerated up to 3 days. It also freezes well, freeze up to 3 months in a sealed container.
