- 7 Bacon strips cut in half
- 14 pcs Red small or baby potatoes or any small pototoes
- 1 clove garlic smashed
- 1 tbsp butter melted
- 2 tbsp sour cream
- ¼ Cup parmesan cheese or cheddar cheese
- 1 tbsp green onion or chives finely chopped
- Salt and pepper to taste
Add the red baby potatoes, smashed garlic, and salt into a pot with water. Boil the potatoes until fork tender.
Drain the water and save the smashed garlic if desired. Let it cool for a few minutes and cut the potatoes in half. Scoop out about three-quarters of the potato flesh and place it in a small bowl.
Add the smashed boiled garlic or grated fresh garlic, melted butter, sour cream, grated cheese, and finely chopped green onion. Season with salt and fresh ground black pepper to taste.
Fill each hallowed potato that halves with the creamy mashed potato filling and sandwich them together.
Lay half a strip of bacon and place the stuffed potato on one end of the bacon and roll the potato to wrap in bacon. Secure with a toothpick then place in the air fryer basket or baking tray lined with parchment paper.
To cook in the Air Fryer. Cook the bacon wrapped potatoes in a preheated air fryer at 375°F for 15 to 18 minutes or until crisp.To cook in the Oven. Cook the bacon wrapped potatoes in a preheated oven at 400°F for 20 to 30 minutes or until crisp.
Soak the toothpicks in water for a few minutes to avoid burning the toothpick while cooking in the air fryer.
You need to leave some of the flesh on the potato skin to keep its shape when wrapped in bacon.
Loosely wrap the potatoes with bacon if you don’t want too much of the potato filling oozing out.
This is also a great make-ahead recipe that can be prepared in a day or two and refrigerate. Then cook it on the day you need it.
Storing
The leftover can be stored in the refrigerator for up to 3 days in a sealed container.
