Ingredients

  • 2 lbs chicken wings 20 pcs drummettes and wingettes
  • 1 tbsp vinegar
  • 1 tbsp Gochujang optional
  • 1 cup Soda water
  • Olive Oil or Canola oil in a spray bottle

For the Chicken Wings Spice Rub (Divided)

  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • ¼ tsp ground black pepper

For the Breading (Gluten-free/Dairy-free)

  • cup cornstarch or potato starch
  • 2 tbsp rice flour sub with AP flour or cornstarch
  • ½ tbsp spice rub
  • ¼ tsp baking soda

Instructions

  • Marinade the chicken wings with vinegar half a tablespoon of the spice rub and Gochujang (optional). Set them aside.
  • Preheat the air fryer to 400°F.
  • Mix all the breading ingredients in a bowl. Dredge and squeeze to coat each chicken wing with cornstarch or potato starch breading.
  • Dip each chicken wing into the soda water, then back into the breading. Dredge and squeeze tightly each chicken wing to be evenly coated with the breading.
  • Air fry the Chicken Wings. Place the chicken wings in the air fryer basket (about an inch apart). Then spray generously with cooking oil. Cook in a preheated air fryer at 400°F for 16 to 18 minutes. Flip twice every 8 to 9 minutes and spray with cooking oil as needed.
  • Double air fry the Chicken wings. Air fry at 400°F for 3 to 5 minutes until blistering and crispy to your liking.
