- 1 Large Tilapia cleaned and seasoned with
- ¼ tsp salt and a pinch of ground black pepper
Sauteed tomatoes ingredients:
- 2 tbsp. canola oil for sauteeing
- 2 Roma tomatoes chopped
- 1 small red onion chopped
- 2 cloves garlic minced
- 2 tbsp ginger sliced
- 2 tsp fresh parsley finely chopped
- ¼ tsp seasoning granules optional
- ½ tsp salt or fish to taste
- 1 tbsp granulated sugar
- ground black pepper to taste
For garnish:
- 1 tbsp Fresh parsley chopped
Clean the fish and season with salt and pepper. In a wok or deep frying pan, heat canola oil on medium-high heat. Fry the fish until golden brown, about 5 to 7 minutes on each side.
While frying the fish, saute onion, garlic, and ginger with canola oil until lightly browned. Add the tomatoes and season with salt, sugar, and ground black pepper. Simmer for 5 minutes or until the tomatoes release their juice ( you may need to add a couple of tablespoons of water). Add finely chopped parsley.
Transfer the fish to a serving plate. Pour the sauteed tomatoes on the fish or serve it on the side. Garnish with chopped parsley. Serve with rice.
