Preheat oven to 375°F. In a small pan melt butter until browned.
Peel the apples. Use an apple slicer to core and slice the apples.
In a medium-size bowl toss the sliced apples with the maple syrup, honey, lemon zest, and pure vanilla extract. Scoop about 1/2 cup in each ramekin and place on a baking sheet.
In a separate bowl add the last 6 ingredients and the browned melted butter. Mix until well combined. Divide into 4 and add on top of the apple mixture.
Bake in a preheated oven at 375°F for about 25 to 30 minutes.
For easy caramel syrup. In a small bowl with the caramel candy add milk. Microwave on high for 1 minute. Stir and microwave for another 30 seconds (depends on your microwave).
Add vanilla ice cream on top of the warm apple crisp, then drizzle with caramel syrup.
