Sizzling Shrimp Gambas Al ajillo (Spanish Garlic Shrimp)

Ingredients

  • 250 g shrimp 10 to 12 extra-large, peeled and deveined
  • 4 cloves garlic minced
  • 3 tbsp scallion chopped 1 tbsp for garnish
  • 1 tbsp white wine vinegar
  • ½ tsp ginger grated
  • ½ tsp smoked paprika
  • ½ tsp red pepper flakes
  • ¼ tsp salt or to taste
  • ¼ tsp ground black pepper
  • 2 tbsp extra virgin olive oil
  • 3 tbsp butter

Instructions

  • Heat the sizzling cast iron plate on the stovetop or in the oven.
  • Season the shrimp with salt, ground black pepper, grated ginger, minced garlic, and white wine vinegar.
  • Heat the wok or skillet with olive oil, add and melt the butter. Add paprika, red pepper flakes, chopped scallion, and seasoned shrimp. Cook for 2 minutes.
  • Serve on a hot sizzling cast iron plate. Garnish with chopped scallion.

Notes

Make sure not to overcook the shrimp and garlic. Keep in mind that it will continue cooking when transferred into a hot sizzling plate.
