Turon (Banana Lumpia)

This Turon (banana lumpia) is a popular Filipino delicious snack made of thinly sliced plantain or saba bananas, and jackfruit. Wrapped in spring roll wrapper with brown sugar, fried until crispy. Then drizzled with caramelized sugar and sprinkled with toasted sesame seeds.

Equipment

Ingredients

  • 4 pcs ripe plantain bananas or overripe saba
  • 16 pcs lumpia wrappers spring roll wrapper, medium size
  • cup brown sugar
  • cup granulated sugar optional
  • 1 tbsp sesame seeds toasted
  • 200 g jackfruit sliced optional
  • 1 tsp cornstarch dissolved in 2 tbsp water
  • Cooking oil for frying 500 ml

Instructions

  • Peel the bananas and slice them into four, lengthwise.
  • Wet a paper towel or damp kitchen towel and cover the lumpia wrappers to keep them moist and soft. Lay one sheet of lumpia wrapper on a plate. Roll a slice of banana one at a time on brown sugar and place diagonally on the center of the lumpia wrapper. Add 2 thin slices of jackfruit. Fold one end of the lumpia wrapper. Use a pastry brush to dip in cornstarch dissolved in water. Brush the edges of the lumpia wrapper. Fold both sides and roll towards the end tip of the lumpia wrapper.
  • Heat cooking oil to 350°F about an inch deep in a frying pan or skillet on medium heat. Test with a food thermometer or bamboo skewer. Place the tip of the bamboo skewer in the middle of the pan and when you see the oil bubbles around the skewer, the oil is hot enough. Fry the prepared turon for 3 minutes on each side or until golden brown. Place on a cooling rack to drip excess oil.
  • In a heavy-bottom stainless steel pan with granulated sugar over medium-high heat. Spread the sugar in the pan and melt until it turns an amber color. Add toasted sesame seeds and pour or drizzle each turon on the cooling rack to drip the excess syrup. Serve hot.
