These delicious Apple Jacks are a popular apple cinnamon pastry in Canada and one of the best sellers in bakeries and coffee shops. Similar to apple turnovers and apple hand pies, they are also filled with apple pie filling and have a flaky crust.

How to Make Apple Jack Pastry

If making homemade puff pastry, you can make this ahead and refrigerate until ready to use. If using a store-bought frozen puff pastry, thaw overnight in the fridge or thaw for about 2 hours at room temperature. Keep the thawed puff pastry in the fridge while making the filling.

Make the Apple Cinnamon Filling

Shred the apples. Place a grater on a cutting board. Grate the peeled, cored apple on the side with the larger holes.

On medium-high heat, melt butter in a saucepan until lightly browned. Add the shredded apples, brown sugar, cinnamon powder, and nutmeg. Simmer for 5 minutes. Add a slurry (cornstarch dissolved in water) and maple syrup. Let it simmer on medium-low heat until thickened. Let it cool. Refrigerate until ready to use.

Prepare Puff Pastry

Using a rolling pin, roll the puff pastry into a 12 by 12-inch square at 1/8 inch thick, then divide using a ruler and cut it into 4 pieces. For a smaller apple jack pastries cut it into 8 pieces.

Coating with Cinnamon Sugar

Brush one side of puff pastry with melted butter. Mix together sugar and cinnamon in baking pan. Place puff pastry side down with melted butter on cinnamon sugar press by hand of use rolling pin to adhere evenly. You want them with less sugar? Then just lightly coat them with cinnamon sugar.

Filling the Puff Pastry

Add about 2 tablespoons of apple cinnamon filling on the middle of puff pastry then do a trifold. Flip with dough seam side down, rub with more cinnamon sugar, if desired.

Use a pastry cutter or wide turner to lift them and place them on a baking sheet line with parchment paper. Be sure dough seam side down.

Baking

Place in the middle rack of a preheated oven at 400°F and bake for about 18 to 20 minutes. Remove from the oven and let it cool in the baking sheet.

  • 1 sheet puff pastry rolled into 12" x 12"
  • ¼ cup butter melted
For Apple Cinnamon Filling
  • cups apples shredded. About 3 apples
  • 2 tbsp butter
  • 1 tbsp maple syrup
  • ¼ cup brown sugar or 3 tbsp less sweet, or to taste
  • ½ tsp cinnamon powder
  • tsp ground nutmeg
  • tsp salt
  • 1 tsp cornstarch
  • 1 tbsp water
For Cinnamon Sugar
  • cup granulated white sugar
  • ½ tbsp cinnamon powder
