Instant Pot Pork BBQ Ribs

These Pork barbecue ribs are so easy and have a mouthwatering flavour bomb homemade barbecue sauce. The depth of flavour comes from the sauce of the cooked ribs that were seasoned with the dry rub spice and the mixture of homemade barbecue sauce. The smoke from the wood chips added a hickory bacon smoke flavour.

How to remove the membrane from the pork ribs?

At one end of the pork ribs, try to lift and pull the membrane. Sometimes it will come off easily in one piece when you pull it. You can use kitchen scissors by snipping under the pork ribs membrane or use a butter knife. Slide the knife under the membrane then pull it.

Why do you need to remove the membrane on the pork ribs?

The membrane will prevent absorbing all the flavour of smoke from the grill and wood chips.  Removing the membrane will also help to absorb all the flavour from the barbecue sauce, and easy to pull apart bone.

Equipment

Ingredients

  • 1 kg Pork Ribs
  • ½ cup water

Dry rub spice ingredients

  • 1 tbsp Brown sugar
  • 1 tsp salt
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp ground black pepper
  • ¼ tsp cumin optional

Homemade Barbecue sauce:

  • ¼ cup apple cider vinegar
  • 1 to 1½ tbsp soy sauce low sodium
  • 1 tbsp dijon mustard
  • ¼ cup ketchup
  • 2 tbsp honey
  • 2 tbsp brown sugar
  • 2 tbsp molasses
  • 1 tbsp lemon juice
  • 2 cloves garlic finely chopped
  • 1 tsp thyme finely chopped
  • 1 tsp sriracha sauce
  • ½ tsp ground black pepper

For the wood chips

  • 1 cup hickory wood chips or your choice of smoke flavour
  • 1 ½ cup water
  • 12" × 10" aluminum foil

Instructions

  • Removing the pork ribs membrane. Sometimes it will come off easily in one piece when you pull it. Use a kitchen scissor by snipping under the pork ribs membrane or use a butter knife. Slide the knife under the membrane, then pull it.
  • Season the ribs with the dry rub spice.
  • In a medium-size bowl, soak the wood chips in the water for at least 30 minutes.
  • Prepare the barbecue sauce. Add all the ingredients in a small bowl, then mix until well blended.
  • Place the pork ribs in the instant pot, then add the barbecue sauce mixture. Add 1/2 cup of water, cover and ensure the steam release is in the sealing position. Press pressure cook on high 30 minutes settings.
  • Use a kitchen towel to release the steam or wait until it cools down, it will slowly automatically release the steam.
  • Remove the pork ribs in the instant pot, or simmer it with the sauce if you want extra tender ribs. Press the saute setting. Remove the ribs before the sauce thickened. Simmer the sauce until thickened.
  • Preheat the barbecue grill or oven at 400°F. Prepare the wood chips. Drain the water and place it in the center of the foil. Fold and close the ends of the foil. Use fork or knife, poke and put holes on the foil.
  • Place the prepared wood chips in the hottest spot, or at the back of the barbecue grill between the barbecue plate and the grill. Let it smoke for a few minutes, then place the pork ribs. Let it smoke and grill for 5 minutes on each side. Brush the pork ribs with the thickened homemade barbecue sauce on the last minute of grilling.

Notes

Optional: You can cook the full slab or cut it into 3 or 4 before cooking.
By grilling is to create the grill marks and smoky flavour from the wood chips. The pork ribs are already cooked, it depends on how well done or dry you like the ribs.
For best results, marinate with the dry rub spice and homemade barbecue sauce overnight.
You can also slow cook on low for 8 hrs on high for 4 hrs.
If using a charcoal grill, add the moist wood chips directly on the started flaming charcoal.
