Equipment

  • 6x12 untreated cedar plank
  • outdoor grill

Ingredients

  • 1 lb Salmon 2 slices, skin removed
  • ½ tsp salt
  • ½ fresh ground black pepper

For the maple-butter sauce

  • butter melted
  • maple syrup
  • 2 cloves garlic minced
  • 1 tsp lemon zest
  • ½ tsp thyme finely chopped

For serving and garnish

  • 2 tbsp maple syrup
  • 1 tbsp lemon juice freshly squeezed
  • 2 sprigs thyme or fresh parsley

Instructions

  • In a baking dish with water, submerged and soak the untreated cedar plank for an hour or two.
  • Pat dry the salmon fillets and season with salt and pepper on both sides.
  • In a small bowl, mix the maple butter sauce.
  • Pat dry the top of the soaked cedar plank and place the seasoned salmon fillets at least a half-inch apart.
  • Drizzle the maple-butter sauce and let it sit for 10 to 15 minutes while preheating the outdoor grill. The sauce will also be soaked onto the cedar plank that will give an extra smoky flavour. You can also marinate with the sauce for 30 minutes before placing it on the cedar plank.
  • Plank Grilling can be direct heat or indirect heat. You can also grill with a combination of direct and indirect heat.
For direct grilling. Have a spray bottle with water ready. In a preheated outdoor grill at 400°F, place the salmon on the cedar plank in the center of the hot grate atop the flame. Cover the grill and cook for about 10 to 15 minutes or until cook through. Check the cedar plank halfway through cooking, if flaming spray with water.
For indirect grilling. In a preheated outdoor grill to 400°F, place the soaked cedar plank in the center of the hot grate, away from the heat. Cover the grill and cook for about 20 to 25 minutes or until cook through.
For the combination of direct heat and indirect heat/grilling. In a preheated outdoor grill at 400°F, place the salmon on the cedar plank in the center of the hot grate atop the flame. Cover the grill and cook for about 5 to 7 minutes, then move away from the flame. Finish cooking indirect heat for about 10 to 15 minutes or until cook through.
  • Transfer the salmon and plank to a platter and serve right off the plank with maple syrup and fresh lemon. Garnish with fresh thyme or parsley.
