Cedar Plank Salmon- Moist and Flaky

How to make Cedar Plank Salmon

  1. In a baking dish with water, submerge and soak the untreated cedar plank for an hour or two.
  2. Pat dry the salmon fillets and season with salt and pepper on both sides.
  3. In a small bowl, mix the maple butter sauce.
  4. Pat dry the top of the soaked cedar plank and place the seasoned salmon fillets at least a half-inch apart.
  5. Drizzle the maple-butter sauce and let it sit for 10 to 15 minutes while preheating the outdoor grill. The sauce will also be soaked into the cedar plank that will give an extra smoky flavour. You can also marinate with the sauce for 30 minutes before placing it on the cedar plank.

How to make cedar plank salmon- Direct heat

6. Plank Grilling can be direct or indirect heat. You can also grill with a combination of direct heat and indirect heat.

For direct heat/grilling. Have a spray bottle with water ready. In a preheated outdoor grill at 400°F, place the salmon on the cedar plank in the center of the hot grate atop the flame. Cover the grill and cook for about 10 to 15 minutes or until cook through. It depends on how you like your salmon. Check the cedar plank halfway through cooking, if flaming spray with water.

Direct heat plank grilling will more likely catch fire and you will end up with charred plank. I find it more flavourful because it creates more smoke than indirect heat.

Cedar Plank Salmon- direct grilling

For indirect heat/grilling. In a preheated outdoor grill to 400°F, place the salmon on the cedar plank in the center of the hot grate, away from the heat. Cover the grill and cook for about 20 to 25 minutes or until cook through.

For a combination of direct heat and indirect heat/grilling. In a preheated outdoor grill at 400°F, place the salmon on the cedar plank in the center of the hot grate atop the flame. Cover the grill and cook for about 5 to 7 minutes, then move away from the flame. Finish cooking indirect heat for about 10 to 15 minutes or until cook through.
