Lemony Creamy Cucumber Salad

- 1 English cucumber large-size thinly sliced
- ¼ red onion medium-size thinly sliced
- 1 tbsp fresh dill chopped
Lemony Mayo-sour cream dressing
- 3 tbsp mayo
- 1 tbsp sour cream
- 1 tbsp lemon juice
- 1 tsp lemon zest or to taste
- ½ to 1 tsp sugar or to taste
- ½ tsp salt or to taste
- ⅛ tsp ground black pepper or to taste
Trim the ends of the cucumber and slice thinly. Transfer in a medium-size bowl, then add thinly sliced onion and chopped fresh dill. Set aside.
In a small bowl add all the dressing ingredients and mix until well blended or until the sugar and salt are dissolved. Mix and toss in a bowl with the sliced cucumber, onion, and dill. Chill for an hour, then serve.
Cucumber has 95% water content. It depends on your preference, you can scrape off some of the seeds in the middle by cutting the cucumber in half and then slicing it thinly. Add salt and let it sit for at least half an hour to remove excess water from the cucumber.
Add the dressing to the sliced cucumbers, dill and onion an hour before serving and keep it chill.
