Lemony Creamy Cucumber Salad

Creamy Cucumber salad is a refreshing salad that is the perfect side dish to serve with barbecue dishes, fried foods and sandwiches. Made of sliced crunchy cucumbers, red onion, and dill. Tossed in a lemony creamy dressing.

Cucumber Salad Ingredients

English cucumber– large-size or 2 small thinly sliced. English cucumber is the best to use for cucumber salad because it has fewer seeds than many other cucumbers.
Red onion medium-size thinly sliced. Substitute with white or yellow onion for a milder flavour.
Fresh dill chopped- The fresh dill adds an herby depth of flavour and freshness to this lemony creamy cucumber salad.

The fresh dill is best to use in this recipe, as the dill is dried, it loses its flavour rapidly. However, you can freeze dill and retain its flavour for a few months. Before winter I harvest from the garden, place it in a sealed container and freeze it.

Lemony Mayo-sour cream dressing Ingredients
Mayonaise – main ingredient for the creamy dressing
Sour cream – adds a lot of creaminess. Feel free to add more, if desired.
Lemon juice – for the tangy flavour substitute with white vinegar or apple cider vinegar.
Lemon zest – it adds a lot of tart lemon flavour to the dressing. It depends on how tart or lemony you like this dressing, so adjust the amount to taste.
Sugar – to add sweetness and balance the flavour substitute with honey
Salt and ground black pepper or to taste

How to Make Creamy Cucumber Salad

Trim the ends of the cucumber and slice thinly. Transfer in a medium-sized bowl. Add thinly sliced onion and chopped fresh dill. Set aside.

In a small bowl add all the dressing ingredients and mix until well blended or until the sugar and salt are dissolved. Mix and toss in a bowl with the sliced cucumber, onion, and dill. Chill for an hour, then serve.

Cucumber has 95% water content. It depends on your preference, you can scrape off some of the seeds in the middle by cutting the cucumber in half and then slicing it thinly. Add salt and let it sit for at least half an hour to remove excess water from the cucumber.
