Slow-Cooked Pulled Pork

- 1 kg Pork shoulder or Pork Loin
Spice Dry rub ingredients:
- 1 tsp salt
- ½ tsp ground black pepper
- ½ tsp paprika
- ½ tsp onion powder
- ½ tsp cayenne pepper optional
Barbecue sauce ingredients:
- 2 tbsp of hickory barbecue sauce
- 1 tbsp ketchup
- 1 tsp Worcestershire sauce
- 1 ½ tbsp soy sauce low sodium
- 1 tbsp apple cider vinegar
- 2 tsp Dijon mustard
- 1 tbsp honey
- ¼ cup brown sugar
- 1 clove garlic grated
- ¼ tsp ground black pepper
- 1 tbsp lemon juice
- ¼ tsp thyme fresh or dried
Pat dry and season the pork with spice dry rub mixture. Heat cast iron with oil on medium-high heat. Sear each side of pork loin until golden brown, about 3 to 4 minutes each side.
Transfer in a slow cooker or crockpot. Pour the barbecue sauce on the pork. With the lid on, set on high for 4 to 6 hrs and on low for 6 to 8 hrs. It depends how tender you like it.
Transfer the pork on a serving plate and transfer the sauce in a saucepan. Let it simmer until thickened.
Use two forks to shred the pork, it full apart easily. Pour the barbecue sauce on shredded pork and serve.
