Ingredients

  • 250 g macaroni
  • 2 tbsp butter
  • 1 clove garlic minced or garlic powder
  • ¼ cup onion finely chopped
  • 2 tbsp all-purpose flour
  • 2 cups milk
  • 2 tbsp cream cheese
  • 1 cup cheddar cheese grated pasteurized processed cheese
  • cup parmesan cheese grated
  • cup mozzarella cheese grated
  • ½ tsp oregano or Italian seasoning
  • salt and pepper to taste

Toppings (optional)

  • 2 tbsp butter melted/browned
  • ¾ cup panko bread crumbs
  • ½ cup Bacon cooked crispy and finely chopped
  • 1 tsp parsley dried or fresh (finely chopped)

Instructions

  • Cook the macaroni. In a pot of boiling water, add salt and macaroni and cook until tender but still firm. Drain the water and drizzle with olive oil.
  • Prepare the toppings. Melt butter until browned, add panko breadcrumbs and toast for a minute. Cook the bacon until crispy and finely chop.
  • Make the cheese sauce. Melt butter, add onion and garlic. Saute until soft and caramelized. Add flour and milk. Stir and bring to a low simmer. Add the four-cheese, oregano and season with salt and pepper. Bring to a boil or until the cheeses melt. Remove from heat.
  • Add the Toppings. Serve the macaroni and cheese on a plate or bowl. Add the crunchy, nutty, toasted panko breadcrumbs, finely chopped crispy bacon, and finely chopped parsley.
