BBQ Pork Burgers

These delicious Grilled BBQ Pork Burgers are made of ground pork with butter and homemade barbecue sauce served on homemade Brioche Bread Buns with creamy Coleslaw and Sriracha Mayo sauce.

How to Make BBQ Pork Burgers

Step 1. Make the barbecue sauce.
You can make the barbecue sauce in advance and refrigerate. To make the homemade barbecue sauce, mix all the barbecue sauce ingredients in a saucepan. Bring to a boil and simmer for 3 to 5 minutes or until thickened. Set aside and let it cool.

Step 2. Make the Coleslaw.
You can also make the coleslaw in advance. If planning to make it a day or two before using it, don’t add the coleslaw dressing to the vegetables. This way, you will not end up with watery coleslaw. It all depends on how you like your coleslaw, soft or crunchy vegetables with plenty of dressing? Some recipes said the more dressing you put in, prevent it from being watery.
How long does coleslaw last in the fridge? up to 5 days.

To make the coleslaw, place the shredded cabbage and carrot in a medium-sized bowl. Add chopped onion and lemon zest. Mix all the Coleslaw dressing ingredients in a small bowl until well blended. Pour the dressing on the vegetables and toss until combined. Refrigerate until ready to use.

Step 3. Make the BBQ Pork Patties. In a medium-sized bowl, add all the pork patties ingredients and mix just until combined. Divide into 4 for regular size patties or 3 for thicker patties.
Shape evenly into round patties about 5 inches wide or an inch wider than the buns, as they shrink when cooked. For a thicker patty, press or make indentations in the center of each patty to prevent it from plumping.
Place them on parchment paper, then place them in a freezer for 20 to 30 minutes before grilling. By doing this, it will help the fats and butter stay in the meat while grilling.

Do you need an egg to make a burger? No. You don’t need an egg to make a burger. The fat of the meat acts as a binder for the burger patties and keeps them moist and juicy when cooked.

Typically the ideal content of meat fat for burgers is at least 20%. For a moist and juicy burger add butter to replace the fat if using lean meat. Adding a sticky barbecue sauce and softened butter, like what I used in this recipe as a binder is another option.

Step 4. Grill the BBQ Pork Patties. Preheat the grill to 450°F. Make sure to grease the grill before heating. By doing this, you will get the grill marks and all you need is to flip once to avoid the patties falling apart.

When you see browning around the patties and juice coming out on top, it’s ready to flip. Grill the patties on medium-high heat for about 4 to 5 minutes on each side.  Brush with barbecue sauce (optional)

 

Step 5. Assemble the burger. Grill or toast the brioche buns (optional). Slather the sriracha mayo on the base bun, then place the burger patty. You can add and slather the homemade barbecue sauce on top of the burger patty (optional). Add the coleslaw, then the top part of the brioche bun.

Homemade Barbecue Sauce
  • ½ Tomato sauce or tomato ketchup
  • ¼ cup pineapple juice
  • 1 tbsp soy sauce
  • 1 tsp Worcestershire sauce optional
  • 3 tbsp brown sugar
  • 1 tbsp molasses or honey
  • 2 tbsp onion finely chopped or minced
  • 1 tbsp garlic minced
  • ¼ tsp ground black pepper or to taste

  • 1 lb ground pork
  • 1 tsp Worcestershire sauce
  • 1 tbsp mustard
  • 3 tbsp homemade barbecue sauce
  • 2 tbsp butter or margarine/softened
  • ¼ tsp salt
  • ¼ tsp ground black pepper
Optional Add-ins

Coleslaw Vegetables
  • 250 g cabbage shredded
  • 100 g carrot shredded
  • 1 tbsp red onion finely chopped
  • 1 tsp lemon zest
Coleslaw Dressing
  • ¼ cup mayonnaise
  • 1 tbsp sour cream
  • 1 tbsp lemon juice or white vinegar
  • 1 tsp mustard
  • 2 tsp sugar or to taste
  • ½ tsp salt or to taste
  • ¼ tsp ground black pepper or to taste
Sriracha Mayo Sauce
  • 2 tbsp Mayonaise
  • 1 tsp Sriracha sauce
