Ingredients
  

  • 250 g puff pastry
  • 2 tbsp turbinado sugar
  • Egg wash
Apple Pie Filling ingredients
  • 2 apple peeled, cored, and diced
  • 2 tbsp pineapple juice
  • 2 tbsp salted butter
  • 2 tbsp maple syrup
  • ¼ cup brown sugar packed
  • 1 tsp cinnamon powder
  • 2 tbsp tapioca starch or cornstarch
  • 1 cinnamon stick
For garnish
  • Cranberries optional
For serving
  • Caramel optional

Method
 

Apple pie filling
  1. In a deep pan over medium-high heat, melt butter until browned. Add brown sugar, cinnamon, pineapple juice, maple syrup, cornstarch, and simmer until thickened. Add the apples and cinnamon stick. Cook for about 5 minutes or until thickened. Remove from heat. Set aside to cool while preparing the dough.
  2. Preheat oven to 375° F. Line the baking sheet with parchment paper.
How to make the pinwheel pastry
  1. Lightly flour the surface, the dough, and the rolling pin. Roll out the thawed puff pastry to a 12x8 inches rectangle about ¼ inch thick. Cut into 4-inch squares. Make a 1.5-inch slit at each corner of the dough, cutting toward the middle. Brush the edges of the pastry with egg wash. Spoon 1 to 2 tablespoons of the apple filling in the center then pull every second point of dough toward the center of the pastry.
  2. Place one cranberry in the middle of the pinwheel pastry (optional). Sprinkle with turbinado sugar.
  3. Bake in a preheated oven at 375°F for about 25 to 30 minutes or until golden brown. Serve warm, drizzle with caramel or vanilla glazed (optional).
