Ingredients

  • 300 g cooked sliced ham
  • 2 tbsp pineapple juice
  • 1 tsp dijon mustard
  • 1 tsp honey
  • 1 tbsp olive oil
  • 1 clove garlic smashed
  • ¼ cup homemade Sweet Pickle Relish
  • cup mayonnaise
  • ½ tsp lemon juice
  • Salt and pepper to taste

Optional add-ins

  • 1 stalk celery finely chopped
  • 1 tbsp onion finely chopped
  • 1 hard-boiled egg finely chopped

Instructions

  • In a small bowl, add pineapple juice, dijon mustard, and honey. Mix until well blended.
  • On medium-high heat, drizzle the pan with olive oil. Add the sliced cooked ham, smashed garlic, and the pineapple juice mixture. Simmer for about 10 minutes or until the liquid is reduced.
  • Set aside and let it cool. Slice into cube and finely chop in food processor. Transfer in a bowl, add homemade sweet pickle relish, mayonnaise, lemon juice and salt and pepper to taste.
  • Spread on your favourite crackers or bread with lettuce.
