Beetroots are packed with nutrients and a great source of fibre, Vitamin D-folate, potassium, magnesium, iron, and vitamin C.
According to research (Wikipedia-Beetroot), beets also contain nitrates and pigments that may help lower blood pressure and fit well into a healthy balanced diet. Beets are also delicious and additions to any salad, soup, roast, dip and side dish, or snack like beet chips.
To prepare the beets to add to this recipe is a bit intimidating but I think it’s worth it.
How to clean, peel, and cook the beets?
To clean the beets: if you buy from the grocery, it’s already clean. You just need to wash it and trim the leaves and leave a 1-inch stem.
My husband loves beets, so in summer we plant and harvest lots of beets. We pickle, bake it for dessert and cook them for a side dish or salad. You can also make a salad from the fresh beets leaves and stems. We pull it from the ground, cut the leaves and leave a 1-inch stem, if you cut the entire stem off, the root will bleed, then we soak the beetroots in water, then scrub it with running water without tearing the skin, or else it will bleed as you cook it.
To peel the beets:
To peel raw beets, it’s better to do it in the sink, it can easily stain surfaces. Use a vegetable peeler to peel the beets. Use gloves if you don’t want your hands to get stained.
To peel cooked beets, use a spoon or back of the bread knife to scrape the skin off, then run it with cold water.
To cook the beets: You can boil, steam, roast and grill the beets. For this recipe boil or steam method is recommended. It depends on the sizes of the beets. small-size beets usually will cook for 15 to 20 minutes, medium-size beets will cook for 25 to 35 minutes, and large-size beets for 45 to 1 hour.
to boil: Submerged the beets in a pot, bring to a boil, cover and cook until tender and still firm but not mushy tender. Test it by piercing with a fork.
to steam: almost the same as boiling, fill it with enough water, place the beets in the steamer’s basket, bring to a boil, cover and cook until tender. It might cook a bit longer than boiling.
After cooking the beets, to stop the cooking process, soak them in icy water.
How to make Beet Brownies

- 150 g beets 1 large or 2 small beets
- ¼ cup sour cream
- 2 tbsp milk
Brownie cake ingredients
- ¾ cup all-purpose flour
- ¾ cup unsweetened cocoa powder
- 1¼ cup granulated sugar
- ½ tsp baking powder
- ½ tsp kosher salt
- 2 eggs large
- ½ cup vegetable oil or 2/3 melted butter
- 2 tsp pure vanilla extract
- beet puree
Instructions
- Preheat oven to 325F. Grease a baking dish or line a 8x8x2 baking pan with parchment paper.
- In a medium-size bowl sift flour, sugar, cocoa powder, baking powder, and salt to combine
- In a separate bowl, beat eggs, vegetable oil, pureed beets, until well blended.
- Add the dry ingredients in four additions to the bowl of wet ingredients. Mix just until combined. Do not overmix
