These Crispy Chicken Quesadillas are full of flavor and come together quickly. It’s a satisfying meal and wonderful to serve for lunch or dinner. Made of Crispy tortillas filled with seasoned chicken, vegetables, and melty cheese.
What is the best cheese for Quesadillas?
For the best flavor, a combination of Mexican cheese or tex mex, mozzarella, Monterey Jack, and or cheddar cheese are ideal and melt perfectly. It glued the tortillas and hold the filling together so the quesadillas will not fall apart.
This Chicken Quesadilla recipe has a perfect amount of cheese and chicken filling. The key to a really good quesadilla is to get the tortillas crispy and not soggy. Too much cheese and too wet or saucy filling cause the quesadilla to get soggy and fall apart.
I add fresh tomatoes instead of salsa. I removed the seeds and then squeezed out some of the juice from the tomatoes. This will make the chicken filling not too wet or saucy.
How to make Chicken Quesadillas
Combine the homemade taco seasoning ingredients in a small bowl and set aside 1/2 tsp for the vegetables.
Fillet or butterfly the chicken breast so it will cook quickly. Season the chicken and cook in a preheated pan with a tablespoon of cooking oil. Cook the chicken for about 2 to 3 minutes per side or until cooked through. You can also grill or bake the chicken. Then cut it into bite-size pieces.
While cooking the chicken, prepare and cut the vegetables. Make sure to remove the seeds and squeezed out some juice from the tomatoes then chop it up.
In the same pan, saute onion, tomatoes, and bell peppers with a tablespoon of canola oil for about a minute or two. Season with the remaining homemade taco seasoning. Then toss in the chicken. Remove from the heat. You just want to marry all the flavors and ingredients together.
Place the tortilla in the pan without grease or with a bit of oil or butter, if desired. You can build your tortilla in two ways.
Spread a handful of shredded cheese on half of the tortilla or spread it on the whole tortilla. Layer with the chicken and vegetables then more cheese on top. Fold in half and flip with the turner after one side of the tortilla is toasted and the cheese melts. It will only take about 2 to 3 minutes per side.
Keep on medium to medium-low heat to avoid burning the quesadilla and to have enough time for the cheese to melt and for the tortilla to crisp up.
Cut in half and serve it with salsa and sour cream or guacamole.
Storing
Refrigerate in a sealed container for up to 3 days. Freeze for up to two months.
