For the best flavor, a combination of Mexican cheese or tex mex, mozzarella, Monterey Jack, and or cheddar cheese are ideal and melt perfectly. It glued the tortillas and hold the filling together so the quesadillas will not fall apart.

Chicken quesadilla in a panThis Chicken Quesadilla recipe has a perfect amount of cheese and chicken filling. The key to a really good quesadilla is to get the tortillas crispy and not soggy. Too much cheese and too wet or saucy filling cause the quesadilla to get soggy and fall apart.

I add fresh tomatoes instead of salsa. I removed the seeds and then squeezed out some of the juice from the tomatoes. This will make the chicken filling not too wet or saucy.
