This Turon (banana lumpia) is a popular Filipino street food, typically serve as a snack or dessert. Made of thinly sliced saba bananas that are similar to plantain bananas. Traditionally with jackfruit, wrapped in a spring roll wrapper with brown sugar and fried until crispy. Then drizzled with caramelized sugar and sprinkled with toasted sesame seeds.
Turon Ingredients
Banana–Saba bananas originated in the Philippines and that is why Turon, banana cue, and banana chips are popular snacks and street foods in the Philippines. I like to use overripe saba bananas for Turon for texture and flavor. You can use fresh or frozen saba bananas, and you can find saba bananas in most Asian stores. Thaw the frozen saba bananas or boiled in water for a few minutes then use them the usual to make Turon. You can also use plantain bananas if saba bananas are not available.
Jackfruit– is optional. I used jackfruit in a can. You can buy jackfruit in some big supermarkets, Asian stores (fresh jackfruit or in a can), or online (jackfruit in a can).
Sugar– you will need brown sugar and granulated sugar. However, If you like less sweet, you can skip the caramelized coating and just use brown sugar to taste.
Spring Roll Wrapper– the same wrapper I used to make Pork Shrimp Vegetable spring rolls. You can buy this in most supermarkets in the frozen section.
Sesame seeds– is optional. If added, you can use toasted sesame seeds.
How to make Turon (Banana Lumpia)
Prepare the ingredients. Set up your working station and ready the drip tray where you will place the Turon after frying to remove excess oil. Peel the bananas and slice them into four, lengthwise.
Wet a paper towel or damp kitchen towel and cover the lumpia wrappers to keep them moist and soft. Lay one sheet of lumpia wrapper on a plate. Roll a slice of banana one at a time on brown sugar and place diagonally on the center of the lumpia wrapper. Add 2 thin slices of jackfruit, and add more if you like. Fold one end of the lumpia wrapper. Use a pastry brush to dip in cornstarch dissolved in water. Brush the edges of the lumpia wrapper, this is to ensure and prevent the wrapper from opening while frying. Fold both sides and roll towards the end tip of the lumpia wrapper.
Heat cooking oil to 350°F about an inch deep in a frying pan or skillet on medium heat. Test with a food thermometer or bamboo skewer. Place the tip of the bamboo skewer in the middle of the pan and when you see the oil bubbles around the skewer, the oil is hot enough. Fry the prepared Turon for 3 minutes on each side or until golden brown. Place on a cooling rack or drip tray to drip excess oil.
In a heavy-bottom stainless steel pan, add granulated sugar over medium-high heat. Spread the sugar in the pan and melt until it turns to an amber color. Add toasted sesame seeds and pour or drizzle each Turon on the cooling rack to drip the excess syrup. Serve hot.
