How to make Sizzling Shrimp Gambas Al ajillo (Spanish Garlic Shrimp)
Start by preheating the sizzling plate, if using. You can preheat over the stove or in the oven.
Prepare all the ingredients. This super-quick shrimp recipe will cook in a minute or 2 if you will transfer in the hot sizzling plate.
Clean the shrimp. Peel, devein, and pat dry. Season the shrimp with salt, ground black pepper, grated ginger, minced garlic, and white wine vinegar. Adding the minced garlic with the white wine vinegar to the shrimp helps not to burn or brown the garlic too much.
Heat the wok or skillet with olive oil, add and melt the butter. Add paprika, red pepper flakes, chopped scallion, and seasoned shrimp. Cook for a minute or 2 depending on the size of the shrimp. Keep in mind that it will continue cooking when transferred into the hot sizzling plate.
Serve on a hot sizzling cast iron plate. Garnish with chopped scallion.

- 250 g shrimp 10 to 12 extra-large, peeled and deveined
- 4 cloves garlic minced
- 3 tbsp scallion chopped 1 tbsp for garnish
- 1 tbsp white wine vinegar
- ½ tsp ginger grated
- ½ tsp smoked paprika
- ½ tsp red pepper flakes
- ¼ tsp salt or to taste
- ¼ tsp ground black pepper
- 2 tbsp extra virgin olive oil
- 3 tbsp butter
Instructions
- Heat the sizzling cast iron plate on the stovetop or in the oven.
- Season the shrimp with salt, ground black pepper, grated ginger, minced garlic, and white wine vinegar.
- Heat the wok or skillet with olive oil, add and melt the butter. Add paprika, red pepper flakes, chopped scallion, and seasoned shrimp. Cook for 2 minutes.
- Serve on a hot sizzling cast iron plate. Garnish with chopped scallion.
