Air Fryer Meatloaf

This amazing Air Fryer Meatloaf recipe is tender, moist and packed with flavour! Made of ground meat, vegetables, seasonings and binder, then topped with a sweet and tangy ketchup glaze. A healthy-ish version of meatloaf, loaded with vegetables!

It’s so economical and easy to prepare. A make-ahead option for a quick weeknight dinner. This air fryer meatloaf recipe could be ready in under 30 minutes! Check the video below on how to make it.

Meatloaf Ingredients

Meat– Ground beef 80%/20% fat and ham. However, 90% lean can be used if substituting the ham with bacon or ground pork. This meatloaf recipe is a great way to use your leftover meat like ham or turkey.

Seasonings– Worcestershire sauce, smoked paprika, thyme, Italian seasoning, salt, ground black pepper, beef Bouillon cube crushed or grated.

Vegetables– Garlic, onion, carrot, celery, and bell pepper. These vegetables not only add flavour but help to keep the meatloaf moist.

For the binder– eggs, honey, bread crumbs, Parmesan cheese. These ingredients not only help to hold the meatloaf shape but complete and balance the flavour of the meatloaf.

For the Meatloaf Sauce option; The classic meatloaf recipe comes with a ketchup glaze, but if you don’t like ketchup glaze on the meatloaf, try my homemade barbecue sauce recipe I used on my BBQ pork burger.

How to Make Air Fryer Meatloaf

Finely chop the vegetables in a food processor and set aside or transfer them to a bowl.

Finely chop ham or bacon in a food processor, then add ground beef or pork to be evenly combined.

Mix the meatloaf ingredients. Transfer in a bowl and mix by hand or keep in the food processor and mix in the seasoning, the vegetables, and the binder ingredients. Press pulse a few times until all the ingredients are evenly combined.

How to shape the meatloaf? Grease the loaf pan generously with cooking oil or spray. Press the meatloaf mixture evenly in a loaf pan using a spatula or by compressing with parchment paper so it holds its shape.

Pro tip: Compressing and shaping the meatloaf nicely in a loaf pan or directly on a baking sheet will help to prevent cracks and falling apart.

Baking the meatloaf on a baking sheet creates a nice exterior meatloaf crust. Invert the loaf pan with the meatloaf on a baking sheet lined with parchment paper and foil. Tap to release the meatloaf.

In a small bowl, mix all the glaze ingredients until well blended. Brush the meatloaf with the glaze to seal; this also helps to avoid cracks on the surface of the meatloaf.

Cooking the meatloaf in the air fryer. Bake in a preheated air fryer to 350°F for 15 to 20 minutes. Remove from the oven, then add the remaining glaze on top of the meatloaf. Put it back in the air fryer, decrease the temperature to 325°F and continue cooking for another 10 to 15 minutes or until the internal temperature of the meatloaf reaches between 160°F to 165°F.

Cooking the meatloaf in the oven. Bake in a preheated oven to 350°F for 35 to 40 minutes, then add the remaining glaze on top of the meatloaf. Continue cooking for 15 more minutes or until the internal temperature of the meatloaf reaches between 160°F to 165°F.

Let it rest and cool for 10 to 15 minutes before slicing. Serve it warm with side dishes or make a sandwich and enjoy!

Ingredients

For the meat

  • 500 g Ground beef 80%/20% fat or 90% lean if sub with bacon or ground pork
  • 200 g ham finely chopped sub finely chopped bacon or ground pork

For the seasonings

  • 1 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 1 tsp thyme

  • ½ tsp ground black pepper
