Barbecue Chicken Ingredients
Chicken thighs are the most ideal part of the chicken for the barbecue. Boneless and fillet for quick and even cooking. Skinless or skin-on. I just find it easily catches fire with the skin-on. You might need to grill them on indirect heat.
For the Barbecue chicken marinade ingredients
Ketchup gives the perfect balance of sweet and tangy taste to the marinade, also for a beautiful glaze.
Brown sugar– alternatively, can be substituted with granulated sugar with molasses
Mustard– regular or dijon mustard
Worcestershire sauce– adds depth of flavour
Soy sauce – light soy sauce to taste
Lemon juice – substitute with Apple cider vinegar
Ground black pepper substitute or add cayenne pepper if desired for some heat.
Smoked paprika – you can use regular paprika and then add 1/4 tsp cumin.

Ingredients
- 500 g Chicken thighs about 6 pcs, boneless, skinless optional
For the Barbecue chicken marinade
- ¼ cup ketchup
- ¼ cup brown sugar
- 2 tsp mustard
- 2 tsp Worcestershire sauce
- 1 tbsp soy sauce
- 1 tbsp lemon juice sub apple cider vinegar
- ¼ tsp ground black pepper
- ½ tsp smoked paprika
- 2 cloves garlic minced, sub garlic powder
Instructions
- Make the barbecue chicken marinade. Add all the barbecue chicken marinade ingredients (except for the minced garlic) in a bowl or container. Mix until well blended. Microwave for few seconds until the sugar is dissolved. Set aside ¼ cup for basting.
- Add the minced garlic and the chicken thighs into the marinade and make sure all of them are evenly covered with the marinade. Cover and marinate for at least an hour. For best result, marinate overnight.
- Grease and preaheat the BBQ grill to 425°F. Cook the chicken on the preheated grill for about 3 to 4 minutes per side. Basting with the reserved barbecue marinade as it cooks. Cover and let it rest for 5 minutes before serving
