One Pan Salmon and Vegetables

This recipe is inspired by my aunt Helen’s baked salmon with mayo-onion soup mix topping. She usually makes this on our family gatherings and became a favourite family recipe. This salmon recipe is so tasty, juicy and delicious. You can serve it with lemon and garnish with lemon zest to add a tangier taste. You can also add more herbs like parsley and dill for extra flavour. The mayo and onion soup mix gave that tasty and flavourful crust. This is one of the simple, easy, and delicious one-pan meal recipes you can make to impress.

Ingredients

  • 500 g Atlantic Salmon fillet
  • ¼ cup mayonnaise
  • 2 tbsp onion soup mix
  • 1 tbsp lemon juice
  • 1 tsp mustard powder
  • 1 large carrot 1/2 inch round sliced
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 to 2 tbsp olive oil
  • salt and pepper

Instructions

  • Preheat oven to 400F. Drizzle sheet pan with canola oil and place the Salmon on one side of the pan.
  • In a small bowl mix mayo, onion soup mix, lemon juice and mustard powder.
  • Spread the mixture on top of the Salmon.
  • Place the veggies on the pan and spread evenly. Drizzle with olive oil, add salt and pepper.
  • Bake in preheated oven for 15 to 20 minutes
