This recipe is inspired by my aunt Helen’s baked salmon with mayo-onion soup mix topping. She usually makes this on our family gatherings and became a favourite family recipe. This salmon recipe is so tasty, juicy and delicious. You can serve it with lemon and garnish with lemon zest to add a tangier taste. You can also add more herbs like parsley and dill for extra flavour. The mayo and onion soup mix gave that tasty and flavourful crust. Ingredients
- 500 g Atlantic Salmon fillet
- ¼ cup mayonnaise
- 2 tbsp onion soup mix
- 1 tbsp lemon juice
- 1 tsp mustard powder
- 1 large carrot 1/2 inch round sliced
- 1 cup broccoli florets
- 1 cup cauliflower florets
- 1 to 2 tbsp olive oil
- salt and pepper
Instructions
- Preheat oven to 400F. Drizzle sheet pan with canola oil and place the Salmon on one side of the pan.
- In a small bowl mix mayo, onion soup mix, lemon juice and mustard powder.
- Spread the mixture on top of the Salmon.
- Place the veggies on the pan and spread evenly. Drizzle with olive oil, add salt and pepper.
- Bake in preheated oven for 15 to 20 minutes
