Ingredients

  • 3 cups overnight rice
  • 227 g crimini mushrooms sliced
  • 3 tbsp spring onion chopped
  • 2 cloves garlic finely chopped
  • 1 tbsp butter
  • 2 tbsp canola oil
  • 1 tbsp soy sauce
  • 1 tsp Shaoxing wine
  • Salt and pepper to taste

Instructions

  • Heat the wok to medium-high heat. Drizzle with 1 tbsp canola oil, add and melt butter. Add finely chopped garlic and sliced mushrooms. Cook the mushrooms for 3 to 5 minutes or until tender. Season with salt and pepper to taste. Transfer on a plate and set aside.
  • Add 1 tbsp canola in a wok. Saute sliced spring onion then add the overnight rice. Stir-fry for 3 minutes. Drizzle 1 tbsp of soy sauce or to taste.
  • Add the cook mushrooms and stir fry for 3 minutes. Add the Shaoxing wine and stir fry for another 2 minutes.
  • Serve in a bowl and garnish with chopped parsley (optional).
