Ingredients
- 3 cups overnight rice
- 227 g crimini mushrooms sliced
- 3 tbsp spring onion chopped
- 2 cloves garlic finely chopped
- 1 tbsp butter
- 2 tbsp canola oil
- 1 tbsp soy sauce
- 1 tsp Shaoxing wine
- Salt and pepper to taste
Instructions
- Heat the wok to medium-high heat. Drizzle with 1 tbsp canola oil, add and melt butter. Add finely chopped garlic and sliced mushrooms. Cook the mushrooms for 3 to 5 minutes or until tender. Season with salt and pepper to taste. Transfer on a plate and set aside.
- Add 1 tbsp canola in a wok. Saute sliced spring onion then add the overnight rice. Stir-fry for 3 minutes. Drizzle 1 tbsp of soy sauce or to taste.
- Add the cook mushrooms and stir fry for 3 minutes. Add the Shaoxing wine and stir fry for another 2 minutes.
- Serve in a bowl and garnish with chopped parsley (optional).
