Biko is a sweet rice cake, made of coconut milk, brown sugar, and glutinous rice. This rice cake is one of the popular and favourite delicacies in the Philippines Typically topped with latik or coconut curds, or coconut jam.
This Biko recipe is quick and easy to make in Instant Pot. No bake, No-Oven, No-stove needed and can be made in less than an hour!
How to make Instant Pot Biko
Start by making the topping.
Step 1. Cook the coconut jam. Add all the coconut jam ingredients in the instant pot. Mix until well blended. Press the saute button. Stir while simmering for 10 to 12 minutes or until thickened. Transfer in a container and set aside.
Step 2. Cook the glutinous rice. In the instant pot, wash the glutinous rice and drain the water. Add all the rice ingredients and mix until blended.
Cover and press the rice button and make sure the steam on sealed position.
Cook for 15 to 20 minutes or until it auto release the steam. Add 1/4 cup of the coconut jam. Press the saute and mix until the rice and coconut jam are well combined, about 3 to 5 minutes.
Step 3. Transfer to a baking pan lined with parchment paper or banana leaf. Transfer the Biko mixture and press with silicone spatula evenly in the pan. Spread the coconut jam on top of the Biko. Slice and serve warm.
Variation:
Baked Biko
Bake at 375°F in preheated oven for 10 to 15 minutes and broil on high for 3 to 5 minutes. Slice and serve warm.
