Equipment

Ingredients

  • ¾ cup Cornmeal
  • ¾ cup fresh kernel or can
  • 2 tbsp butter or margarine

Dry ingredients:

  • 1 ¼ cup all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt

Wet ingredients:

  • ¾ cup coconut milk add 1/2 tsp vinegar
  • 1 egg beaten at room temperature
  • 1 tsp vanilla
  • ½ cup unsalted butter melted
  • ¼ cup sour cream
  • ¼ cup honey or maple syrup
  • ¼ cup brown sugar packed

Instructions

How to remove kernel corn from the cob?

  • Remove the husk and silk. Trim the top end. Place the trimmed end of the corn cob on the inverted smaller bowl inside the large bowl. Hold the stem end of corn cob use a serrated or steak knife, then cut downward, as close to the base. Set aside.

Prepare the batter

  • In a medium-sized bowl sift all the dry ingredients, then add cornmeal. Mix to combined.
  • Add all wet ingredients to dry ingredients and kernel corn. Mix just until combined.

To bake in a barbecue grill

  • Preheat barbecue grill to 400°F. Place the cast iron pan in the middle of the grill or one side of the grill, not indirect heat. Turn off the middle burner or if using charcoal, move the charcoal on one side or both sides of the grill. Add and melt the butter in the cast iron pan and pour the cornbread mixture. Bake in a preheated barbecue grill at 400°F for 8 minutes. Rotate the cast iron for even cooking and bake for another 7 to 10 minutes or until the barbecue skewer inserted in the middle of the cornbread comes out clean.

To bake in oven

  • Bake at 400°F 20 to 23 minutes or until golden brown and the toothpick inserted in the middle of the cornbread comes out clean.
