Equipment

  • mason jar or pitcher

Ingredients

  • 1.5 liter of water
  • 2 stalks Lemongrass cut into 4
  • 2 Pandan leaves cut into 4
  • 1 sprig mint
  • 1 lemon sliced
  • 3 tbsp honey

Instructions

  • Cut both ends of Lemongrass slice or cut into 4. Smash and bruise to release the flavour.
  • In a saucepan with water, add lemongrass and pandan leaves. Cover and boil for 30 minutes.
  • In a pitcher or big mason jar, add lemon. Strain the tea in the pitcher or jar. Add honey and mint. Stir and let it cool or put in the fridge for 2 hours or overnight.
  • Serve it with ice and garnish with sliced lemon, mint, lemongrass and pandan.

Notes

You can boil the lemongrass and pandan leaves for at least 15 minutes cover. However, it's recommended to boil the pandan leaves and lemongrass for at least 30 minutes to extract more the citrusy lemony flavour from the lemongrass and create that green tea colour.
