Tiramisu
Alcohol-free version Tiramisu. A delicious decadent Italian dessert made of mascarpone cheese and eggs.

- Prepare the coffee or espresso, add vanilla. Set aside and let it cool.
- On medium-low heat with simmering water over a double boiler, whisk egg yolks and ¼ cup of sugar for 3 to 5 minutes. Whisk until sugar dissolved or until it changes from yellow to pale. Remove from the double boiler.
- Add the cold mascarpone to the warm egg yolk mixture. Whisk until smooth. Add pure vanilla extract, mix until well blended. Set aside.
- In a separate bowl whisk egg whites and ½ cup of sugar over a double boiler with simmering water on medium-low heat. Whisk for 3 minutes or until sugar is dissolved. Remove from the double boiler.
- While the egg white mixture still warm, beat in a stand mixer or electric beater on medium speed until stiff peaks.
- Fold in the egg yolk-mascarpone mixture to the whipped egg white until blended.
- Quickly dip the ladyfingers and line in the baking dish. Sprinkle the crushed graham crackers and chopped chocolate truffles. Pour half of the mascarpone mixture and spread evenly. Repeat the procedure on the second layer.
- Cover and chill for at least four hours or overnight.
