Buttermilk Crispy Fried Chicken Tenders

Super Crispy Buttermilk Fried Chicken Tenders without egg are marinated in seasoned buttermilk then coated with flour and panko breadcrumbs. Pan-fried to crispy perfection. Serve with creamy delicious Homemade Honey Dill Sauce.
For a healthier version. Can also be oven-baked or air fried with just a little spray of cooking oil, you can get the same crispiness.

Equipment

Ingredients

  • 500 g chicken breast sliced
  • ½ cup buttermilk
  • ½ cup all-purpose flour
  • 1 tbsp cornstarch
  • cup panko bread crumbs

Chicken Seasoning blend

  • 2 tsp kosher salt
  • 2 tsp dried oregano
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • ½ tsp cayenne pepper
  • ½ tsp ground black pepper

For frying

  • canola oil 500 ml

For serving

Instructions

  • Slice the chicken breasts into 3 to 4 slices. Pound with a meat tenderizer to flatten the meat.
  • Season with half amount of chicken seasoning blend. Add the buttermilk and marinate for at least 30 minutes or overnight.
  • Prepare the breading. You will need two baking sheets. Add and mix the flour, cornstarch, and the rest of the chicken seasoning blend in a small baking sheet. In another baking sheet for the panko breadcrumbs.
  • Dip the marinated chicken in the flour mixture one at a time. Press to adhere to the meat. Dip it to the buttermilk marinade then to the panko breadcrumbs. Make sure to press the chicken firmly to the breadcrumbs so it will adhere to the meat.
  • Frying the chicken tenders. In medium-high heat, preheat the oil to 350°F. Test with the bamboo skewer. Dip the bamboo skewer in the middle of the pan, when the oil starts bubbling around the skewer it's hot enough. Use a tong to place the chicken in the hot oil, just three to four pieces at a time without crowding a pan. Cook until golden brown. About 2 to 3 minutes on each side. Place on a cooling rack with the baking sheet or paper towel to drain and remove excess oil. Serve hot with honey dill sauce.
