Shrimp Scampi Pasta

This flavourful super easy-to-make Italian-style Shrimp Scampi Pasta recipe is all about the quality and fresh ingredients used. It is made with Parmigiano-Reggiano aged for 30 months, fresh lemon and herbs, and shrimp cooked in garlicky butter-olive oil sauce.

How to make Shrimp Scampi Pasta?

Gather, prepare and arrange all the ingredients close to the stove. You need all the ingredients to easily reach and can add quickly to the pan. This recipe only takes 5 minutes to cook.

Boil water in a pot and add about a teaspoon of salt and a tablespoon of olive oil.

In a pan with olive oil, melt butter over medium-high heat. While the butter is melting, add the pasta to boiling water. This only needs to cook for about a minute or two. Angel hair or Capellini pasta cook in no time. Under-cook for 2 minutes according to package instructions.

Add shrimp and garlic to the pan with melted butter and olive oil. Cook for about two minutes. The cooking time for shrimp will depend on size. Avoid over-cooking the shrimp, the texture becomes rubbery when overcooked.

Add oregano and white wine (optional for an alcohol-free version) to simmer for 30 seconds.

Add the pasta, grated Parmigiano-Reggiano or parmesan cheese, pasta water, and lemon zest.  Cook for another minute or two then off the heat.

Add fresh basil and parsley, salt and pepper to taste.

Garnish with parsley and shave of Parmigiano-Reggiano or grated Parmesan cheese.

  • 1 tbsp fresh parsley chopped
